Determination of Lead and Cadmium Levels in Milk and Dairy Products in Kerman

Background & objectives: Milk and dairy products are fundamental components of human nutrition. However, contamination with heavy metals such as lead and cadmium poses a significant public health risk. This study aimed to determine the levels of lead and cadmium in milk, yogurt, and cheese in Kerman City.
Methods: A total of 70 samples were randomly collected between December 2021 and March 2022, including 10 raw milk samples, 10 pasteurized milk samples, 10 ultra-high temperature milk samples, 10 traditional cheese samples, 10 pasteurized cheese samples, 10 traditional yogurt samples, and 10 pasteurized yogurt samples. Heavy metal concentrations were analyzed using atomic absorption spectroscopy (AAS). Duncan’s test was used for statistical analysis.
Results: A significant difference was observed in lead concentrations among the different samples (p<0.05). The highest mean lead concentration was detected in traditional cheese (99.71±5.94 µg/kg), while the highest cadmium levels were found in traditional yogurt (6.79±0.20 µg/kg) and traditional cheese (6.55±0.18 µg/kg). Lead levels in all samples exceeded the permissible limits set by the National Standard of Iran and the European Union.
Conclusions: The findings indicate that lead contamination in all tested dairy products surpassed permissible limits, highlighting the need for regular monitoring and regulatory interventions.
